You should come to Ecuador if you want to see a wide variety of things, and stay in one country. There's the Amazon rainforest, the Andes, the coast, and the Galapagos Islands. There's a lot of many different things to do, and all of those places are totally totally different. I would recommend Ecuador (Quito as a central place). Oh and everything is cheap so it won't cost a lot :).

You should try Suriname, I've been there and I loved it. It's quite cheap and there's a mixture of all sorts of cultures and religions such as hindu, islam, animalistic, jews, christians, ... all living together without any tensions ;) it's beautifull to feel the spirit of tolerance.

In Mexico, you should visit Chitchen Itza and Uxmal( you could sleep in Merida ) and then go to Playa del Carmen and Conzumel for example. I liked Mexico City and Taxco as well.
Rio de Janeiro is a must! You have a small nice island nearby, called Ihla Grande; than Iguazu Falls..
Buenos Aires is nice as well!
The rest I haven't seen.

Chile has some lovely landscapes and quite a bit of variety: Patagonia in the South, then the Lake district (definitely a region I can recommend) and the Island of Chiloe, and the northern part with its semi-desert and desert.
San Pedro de Atacama is a much loved destination. I myself liked Arica, and can recommend the tour to the andean high-plateau that starts from there. It goes to the highest natural lake, at 4500m height.
Venezuela: keep n mind that everything is quite expensive here, in spite of it being a third-world country. But the Canaima National Park is definitely worth a visit. That would take a few days, if you want to cross the Gran Sabana plateau, and also visit the Lagoon of Canaima and Angel Falls. Seeing Angel Falls from the ground is a 3 days trip. I've heard the Climb up Mount Roraima (the talles of the tabletop mountains in the gran Sabana) is well worth it, though I haven't done it myself yet. That trip would take like 5 days.
Otherwise you might try the Andean region in Venezuela, and the Llanos plains (cowboy land :)
And some of the beaches. The Chichirivichi beaches have quite a reputation, and should have nice snorkeling spots. The Los Roques archipelago is quite famous for its beaches and Coral reefs (although some tourists told me there are nicer reefs elsewhere), but that could be a pricey excursion.
I second any recommendations concerning Mexico. Teotihuacan, near Mexico city, was great, as well as Monte Alban, by Oaxaca. I rather liked Oaxaca too. And the sites across Yucatan are definitely worth a visit: Palenque, Chichen Itza, Uxmal....

Big question! I think you need to plan a basic route, and also think about timing. If you're going in November and intend to be there six months then you should plan to be in Brazil for Feb (Carnival) - try Salvador if you want something more authentic than Rio. So with that in mind maybe start in Argentina and work up? Then it depends what you like. For outdoorsy stuff and scenery, then Patagonia is stunning. I also loved Bolivia (Uyuni, Sucre, Death Road, Potosi - all great) and of course Peru. Colombia and Venezuela are harder work, but Angel falls was a highlight for me. As for central America, Costa Rica for the jungles and beaches, Honduras for the diving.

If you want to get a taste of Mexican culture and history- central Mexico is where you should go. A less developed state is Oaxaca, there are many indiginous people groups still living there. Not a lot for tourism in that state, but beautiful to see, and different from the big cities. If you want beaches I suggest the Pacific Coast- Puerta Vallarta, etc.

You need to pick some primary countries. There's so much to see and do in South America that it's too big to just expect to see it all.

I recommend Ecuador. Cheap travel and beautiful country.Just be very careful at night time, try and go out at least with another person. Other than that it's pretty safe. Quito, the capital, has wicked nightlife, and lots of attractions.Try to find Finn Macools and The Bungalow, both very cool bars. Accommodation is very cheap and pretty safe, look around the Mariscal. Check out otavalo. The city of Loja, in the province of Loja is very pretty, kinda touristy but nice. I highly recommand Vilcambamba, close to a rainforest. And Montanita on the west coast of Ecuador, great surf village. Another country that is beautiful and prob the safest out of all the other countries in SA is Argentina. Buenos Aires has wicked night life like Quito but the standard of living is different.Check out Bariloche and of course like the great explorer DArwin, visit Patagonia. Also in Uruguay check out Colonia, sorta has the style of Spain. Very beautiful. Which ever you choose to do, you'll love it!
