Have you considered staying in a castle? My nephew honeymooned that way in Ireland.

The Europa Hotel in Belfast is very nice

Morrison Hotel (Dublin). One of the nicest, contemporary-modern and best of all, close to everything hotels in the city. Food is pricey, but that's why you go and explore Dublin.
