Hiroshima Okonomiyaki. They have Okonomiyaki also in other cities in Japan, but they are not the same. You definitely have to try that!

Since I was not a vegetarian yet, I loved trying as any different kinds of sushi as I could. The only one I didn't like was sea urchin.

Everything in Japan is absolutely awsome, but my favorite would be definetely Okonomiyaki. I also like other strange things like Natto and Sashimi and Japanese sweets.

The obvious reply is sushi. If you like sushi, you will be in heaven. This is not the place for meat lovers, so I hope you like fish.

if you like sushi try sushi with otoro (fat part of tuna fish) it melts in your mouth.
as well check the home style restaurants, they have a lot of goodies there, it can sound crazy but even cured tuna guts taste good there not metioning a big variety of tasty sake. also would suggest to try udon, soba shops. they are amazing... and try "calpis", thats the best refreshing drink ever.

If you are keen on Japanese food you definitely have to stay at MINSHUKU (guest-house), where the stay is comparably cheap, you live in typical Japanese room with typical Japanese bathroom (shared) and the best thing - you can experience REAL!! HOME!! MADE Japanese food made by BEST! house wives on the Earth - Japanese women. AND ITS LOCAL! so you won't be able to taste these meals in typical chains or restaurants!
You get a lot of little dozes of several things for one meal, so you can have nice outlook on Japanese cuisine staying there only for 2 nights for ex.
I bet one gonna love anything that will be served in Minshuku ;)
If you travel cheap in bigger cities, the best places to eat and experience Japanese cuisine are chains like:
Yoshinoya - gyudon (beef+rice)
Matsuya - kare (BEST Curry, Japanese style)
Chukasoba - ramen (several types)
Tenya - tenpura (marvelous!! must-eat-one)
In such places you pay 500Y and you can save a lot not visiting restaurants. And it's MUCH MUCH BETTER than ANY FASTFOOD!!!
(If you REALLY need to visit McDonalds in Japan, try TERIYAKI BURGER, it gonna be the best burger you've ever eaten).
The other fastfood you not gonna experience anywhere are ONIGIRI that you buy in 7/11, Family Mart, Sancus/Circle K, Lawson or any other convenient store. Comparably cheap, VERY HIGH QUALITY.
As for me buying OBENTO in convenient stores is just nonsense. You pay comparably a lot for a cold meal that they gonna heat up in microwave - what's the deal? It's MUCH BETTER to visit one of the chains I listed above.
If willing to taste OBENTO buy it on train stations while moving from one city to another. You have a lot of LOCAL FOOD, which always tastes the best.
And yes, sandwiches are one of the most favorite food when I visit Japan ;) Soft bread, really tasty vegetables, souses. Best sandwiches I have ever eaten.

Hmmm... not exactly food but i got addicted in MILK TEA :)
Other than that, the variety of ready-made sandwiches in super-markets blew me away.
And for fast-food: Takoyaki!

Ookinomiyaki is definitely a favorite, especially when you're at a place that lets you cook it yourself!
Though sushi at one of the local joints near Tsukiji Fish Market in the Tokyo area isn't a meal to be missed either. Everything is completely fresh.

As a vegan I was blown away by traditional Japanese foods, which are usually healthy and very different to western foods. But my favourite would have to be natto, it is an amazing, tasty breakfast food!

Shabu shabu!! It's similar to sukiyaki, but less sweet and more savory. It consist of thinly sliced meat and vegetables, boiled in water or dashi and served with dipping sauces.

One thing you must try in Japan, even if you don't think it should be eaten, is whale. My husband and I ate that in Kochi, which is known for its whale. That has to be one of the best meals I've ever had, apart from okonomiyaki in Hiroshima. Definitely worth eating.
