It's made from heated raw milk, produced in a very extensive conditions of feeding, which provides a high milk fat content (4.23%) and low protein content (3.18%). Sir belongs to a group of full-fat soft cheese with at least 50% fat in dry matter of cheese, average weight 1200 g, milk paint, a characteristic gummy strength for which creaked in the eating. Cheese has unexpressed salinity with an average of less than 1% salt in cheese. For the production of cheese is used fresh and filtered milk, which is usually made directly after milking, or a shorter maturity of milk at room temperature.
