The John Gray Sea Canoe excursion from Phuket Thailand is amazing.  You leave from Phuket and travel into the heart of old volcanos that are jetting up out of the ocean then you get into sea canoes and travel thru small caves into the heart of the volcano lakes where you find all sorts of interesting plants and animals.  This was one of the most amazing experiences of my life!
