DB Bistro Moderne is famed chef Daniel Boulud's more casual (compared to neighbouring restaurant Lumiere) restaurant in Vancouver. It is a modern French and Canadian bistro that shares the same name as one of his New York restaurants, but has a mostly different menu reflecting Vancouver tastes and seasonal, local, and organic ingredients when possible. His DB burger (top sirloin burger with braised short ribs and black truffle) does make an appearance though. At $28, the burger is one of the most expensive items on the menu of this pleasant and appealing room.

Had the $38 three-course menu at DB Bistro Moderne, which included the soup of the day (Asparagus Veloute), Coq au Vin, and Strawberry Pavlova. There were also a couple complimentary amuse bouches, including Alsatian flatbread and a smoked salmon crepe.

The food was expertly cooked, with the Coq au Vin being very flavourful and moist, and the other dishes being quite tasty as well. I also got to try a bite of the DB Burger, which was good, although it was huge and needed to be eaten with a fork and knife. Service was outstanding - we received new bread and water as soon as it looked like we were running low.

Phenomenal service. Attentive and subdued it was the best service I've had in recent memory; terrific. Had the 3-course menu which blew my mind.
Started us with some cheesy flatbread (my description is understated :) I had the terrine, coq au vin and strawberry pavlova. Also tasted the db burger which was terrific. Way too big though. Ate a quarter of it and felt like a whole burger. Definitely going back next time I'm in Vancouver.
