Ramen
Daikokuya is a small restaurant in Little Tokyo that prides itself on its ramen.  The hot savory broth with tender pork and slippery noodles certainly merits that pride, and you can see the evidence in the lines that form outside.

They don't take reservations, but they do have a waiting list once you arrive.

There are also Daikokuyas in Costa Mesa, Monterey Park, and Hacienda Heights.

Getting there:
It's in the Little Tokyo area of downtown.  Because you're downtown, there are a lot of one-way streets, so be careful of that.  Street parking, especially on 1st, is not really an option.

The wait is often absurdly long, but once you're seated it won't matter anymore because the ramen is amazing and the sushi is tasty as well. Service is pretty quick, and if you sit at the bar, you can watch them work in the kitchen.
