The thing to do at Garibaldi is to hike to the top of the mountain, and it is a long (takes most people 5 hours, but I am a terrible hiker and took me a couple hours longer) steep hike with a lot of switchbacks. Make sure to bring a warm sleepingbag. There are basic cabins you can sleep in at the top and from memory a basic kitchen so good to bring something like pasta and tomato sauce. Can't remember if we brought our own pots and stuff as it was a group organized thing. All I remember was that the glacier lake at the top was beautiful, and I felt a lot of pain the day after we hiked back down (probably a mistake to take it so quickly- did the downhill bit in 2 hours.) And it was pretty cold up there, but that was understandable for November. There is probably more detailed information on the National Parks website regarding the facilities available at the top.
