Travel Tips from people who've been to Eastern Cuba
Castillo de San Pedro del Morro is one of the best  places off the beaten track. An old Spanish castle used for the town protection from pirates.
If you are approaching it from the beach side driven by the Lonely planet guide recommendations, don't even try...unless you want to shoot Indiana Johns V :-)

In Santiago de Cuba, Chinese restaurant is big "NO NO" unless you need something to cheer up your belly and digestion system.

This is the other end stop on the travel bus route through provinces in Cuba.  The people here are the best in hospitality ONCE THEY KNOW YOU and the business you are here for.  But they are definitely friendly here as in smaller towns.  I didn't know much Spanish and was still treated rightly.  Most of the citizens who befriended me spoke flawless English!TIPS:Know Spanish!Stay with friends.Carry toilet paper!DO NOT take pictures of soldiers, or those who you haven't asked permission.Buy no more than three boxes of cigars.  Avoid ANY illegal activity or you'll stay longer than you wish.  You MUST see the Plaza of the Revolucion and take the guided tour.  WALK the Malecon rather than drive.  The Los Americas is the best hotel for value.  Walk as many places as you can as see all five/six neighborhoods.  The churches are beautiful and somewhat preserved since the religious ban lifted in 1993/94, so these are also great cultural places to photograph.  You must see the Barracks.  El Morro will encompass your entire day so bring WATER or you'll be charged an exorbitant fee to refresh yourself, then go to the beach below.  There is an excellent airport runway view from the ancient fortress from which planes fly directly over your head as they land.
TIP:
Dress down, look/act Cuban and you can get around on their public transportation for pennies.  Wear no socks and carry no watch.

Stayed in the Brisas Guardalavaca, a 24 hr all inculsive hotel at the beach, the resort was lovely with excellent staff that attend to your every need with a smile. We always tip them well as the Cuban people dont earn that much and they are such nice people. I usually dish out my clothes and toilettries at the end of the holiday they truly appreciate anything you give them, and it makes the case much lighter for coming home. There are plenty of trips to do or just walk along the beach to the daily souvenier market then laze about eating and drinking in between. Swimming with the dolphins was fantastic as was our 2 day trip to Havana you fly up there in the morning coach picks you up from aiport you do some sightseeing and have lunch in between, then to the Melia Hotel very plush, after dinner your taken by coach to the Tropicana Nightclub brilliant show where drinks are provided, then back to the Melia for overnight stay, next day bit more sightseeing in Havana city which includes a market wish I'd bought goodies (will do it on my next visit in November 08). Fly back to Holguin coach takes you back to the Brisas. Highly recommend doing this trip think it cost about £150 each but was well worth it as all food and drink is included in price. So it's not that expensive when you see what you get for your money.
