not much to do in celaya, however they do have a beautiful, quaint, colonial center, including a large cathedral. a band will play on the plaza on sunday's. For a better time, check out the alameda, which is much more pleasant a garden. Better yet, drive a half hour and go to queretero or San Miguel de Allende
