Museo Regional de Ica is a must see! You can get a very up-close look at extremely well preserved mummies and shrunken heads. If you enjoyed the Bodies Exhibit then you will definitely like this museum. (additional bonus is no crowds)
Go on a winery tour. Not only do you see where the delicious pisco is made but you get to do an extensive sampling afterwards.
Unless you near Plaza de Armas (main plaza) it is not safe to walk around Ica (even during the day). So when touring Ica you can either book a city tour with a travel agency in the town center or hire a taxi for a few hours.
Consider staying in Huacachina (5km west of Ica) and doing a day trip to Ica.
