Bethlehem is an amazing place, even if you aren't religious. The old city has lovely winding stone streets, the Church of the Nativity is a must see. There is also a jewelry store in the Cultural Center where you can buy handmade silver jewelry. Tip: if you're planning to go to Jerusalem from Bethlehem take the number 21 bus from the center - Yasser Arafat street - (costs around 6 NIS) - you don't have to go through the Gilo checkpoint.
