To the left of the entrance of the fish market (one of the largest in the Red Sea) there is a small cheapest-of-the-cheap restaurant that serves great grilled fish that is so fresh that it is basically still alive. If you don't find anything that suites your tastebuds, you can always check out the numerous fishermen who hang out around the market for crab, lobsters, sharks or barracuda, and take your stash to that same restaurant, where they'll cook it for you for a minimal fee.
