One of the best things to do is rent a car (for about 30 bucks the whole day) and drive around the island. It allows more freedom and more time to do what you want. Also check out the Dolphin show at the Marina near Palma. If you have kids, they'll love it.

if you're in mallorca don't stay in palma visit the historic town of pollenca and it's harbour town port de pollenca-definately worth a visit
